Victoria Rhubarb (Rheum x coltorum 'Victoria') is a popular, high-yielding, and reliable heirloom perennial, introduced in the mid-1800s, renowned for producing thick, tender, light green to pink-speckled stalks. It is widely used for culinary purposes in pies and sauces due to its sweet-tart flavor, thriving in USDA zones 3–9, often reaching 2-3 feet tall and wide. 

Key Characteristics and Appearance

  • Stalks: Thick and tender, with colors ranging from pale green to speckled pink or red at the base, often with green tops.
  • Leaves: Large, heart-shaped, deep green leaves with wavy margins. Note: Leaves are poisonous and should not be eaten.
  • Flavor: Considered very sweet and juicy, but with a classic tart punch.
  • Habit: Clump-forming, vigorous perennial that can live for 20 years. 

     

Growing and Harvesting Information

  • Zones: Thrives in USDA Zones 3-9.
  • Spacing: Requires significant space, typically 3-4 feet apart.
  • Sun/Soil: Prefers full sun to partial shade and rich, moist, well-drained soil.
  • Harvesting: Often produces within the first year, but best to wait until the second or third year for heavier, 6-week harvests.
  • Harvest Method: Pull the stalks from the base rather than cutting to encourage more growth and prevent rot.
  • Resistance: Highly resistant to pests, diseases, and deer.
